Did similar at [Trevone Beach in north Cornwall](https://greyarro.ws/t/time-lapse-videos/2611/36) with the tide coming in and going out again.  
Just used a spare (old) smart phone, fixed to the roof-box on the car with a sucker-mount, using a great little app (Framelapse Pro - Android) that takes the pics at set intervals and renders direct to video as it goes.
