Creating a top down 2D Map

A client has asked me to recreate a shot of a science park which looks like it was taken from a lot higher up than 120m. I know I can take several shots and stitch them together to form a large pano but have started to read more about drone mapping which is new to me.
Does anyone have any advice or tips on what software to use and how to plan something like this properly?
I have been looking at Map Pilot Pro to plan the flight(s) and Maps Made Easy to process and generate the image as this seemed to be the easiest and cheapest option.
The site is around 50 hectares and so far the flight plan is looking like all 3 batteries and 336 images if I fly at 120mtrs at 5m/s.
I am not looking for 3d mapping or modelling at this point so not ready for Drone Deploy yet.

Which make and model of drone will you be using for this task @charlieabbottuk ?

Sorry should have said, I have a choice of an Air2s or an Inspire 2 with X5S and a 12mm lens
