During the summer, when I was visiting my cousin in Tillicoultry, I was tempted to take the drone up from Sainsburys car park in Stirling, but a quick look on Google Maps put me off. Could have been do-able but, Nah 
I’ve taken off from layby’s in the past, just use a little common sense I say. Launch when there’s no traffic approaching in any direction, and only bring the drone back when it isn’t going to effect any one’s driving consentration. Saying that, I bet half the people who were driving past at the time was on the bloody phone🤣.
