Depending on the version of Raspian you install you either get just the commandline ( the thing you are afraid of ) and a desktop, Ive never installed the desktop version tho.
Most howtos you find for the pi will just give you a bunch of commands to run in the cli.
Once you have flashed the OS image onto your SD card you’ll probably completely destroy the OS a few times, its just a case of reflashing and starting again, you’ll get used to it
I have Built a Drone with an Arduino Uno and an STM32 Blue Pill, but no experience with a Pi.
I Have played with Ubuntu and Python, but with very little experience, I need to speak with my next-door neighbour more as he is an expert with python!
Linux is a really great operating system once you get used to it. The HUGE amount of Open Source software available for the platform is just awesome. So I suggest you invest in a few beginners Linux books and Youtube guides. There are desktops such as Gnome for Linux and the Pi which you can definitely use to make it feel like windows or a Mac but if you want a really fast as near real-time as possible Transponder then its best to run without Gnome or similar and keep the OS as light as possible.

And you can configure your distro to start only with a terminal, starting a graphical desktop env only when you need it.
