I’m aware of a few A360 owners that are having the same issue. It seems limited to the N3 goggles (not goggles 3) and the Motion controller 3 mostly in Sports mode. I’ve seen 2 owners saying they have the same in Normal mode, but I wonder if it’s just their obstacle avoidance kicking in.
So far everyone’s A360 is flying as it should using the RC 2 controller on its own
I’m aware 2-3 of us who are in contact with DJI and sending our flight logs. So I think this is very much on DJI‘s radar.

Seems like all the videos I’m seeing (including my own) were on sunny days with high contrast and shadows from trees. That may or may not be part of the problem…..time will tell.
